All-Purpose Entertaining Crackers

2 ½ cups (approximately 10 5/8 ounces) all-purpose flour, plus more for the surface
2 teaspoons table salt
1 teaspoon granulated sugar
½ cup (4 oz) unsalted butter, cut into small pieces

Why buy something that can be easily and deliciously prepared at home? Prepare these versatile crackers just as they are, or sprinkle with Asiago cheese, sea salt and black pepper, Italian herbs or sesame oil after rolling out the dough and before slicing it into the desired shapes. Please note that if you choose to make larger crackers, 2 inches, you will get about 60 crackers for 30 people.
Add the flour, salt, and sugar to the bowl of a food processor; beat until smooth 3-4 times. Add the butter to the bowl of a food processor; beat until the mixture is creamy, 7-8 times, making sure that all the butter is incorporated. Whisk together the flour, baking powder, and egg in a small bowl; add to the bowl of a food processor. Beat until the mixture forms a ball, 6-7 times.Place the dough on a lightly floured surface; knead until smooth 4-5 times. Divide the dough in half; form a circle from each half. Cover with plastic wrap and refrigerate for about 1 hour.Preheat the oven to 425°F. Using 1 dough mixer at a time, roll out the dough 1/8-inch thick on a lightly floured surface. Cut the dough into the desired shapes and place on baking sheets lined with parchment paper, 1 inch apart. Bake in the preheated oven until the edges are golden brown, 11 to 12 minutes, then change the pan from top to bottom after 6 minutes. Cool in the pan for about 5 minutes; transfer the crackers to a wire rack and let cool completely for about 10 minutes.
