3 flavorless gelatin envelopes
¾ cup sugar
4 cups watermelon juice (from 8 kg. watermelon, peeled and mashed)
Watermelon balls (use a melon roasting pan)
Whipped cream with sugar
¼ cup thinly sliced mint leaves

To make

Watermelon and mint are a classic salad mix; here we've combined them into a delicate, refreshing dessert.
In a small glass bowl, combine the gelatin with 1 cup of cold water and let stand for 1 minute. Reheat in the microwave on high power until the gelatin is melted, about 1 minute. Add the sugar, whisking until completely dissolved. Whisk the mixture with watermelon juice. Spread the mixture over 6 glass plates (about 8 ounces each). Refrigerate until set, about 2 hours.Top each serving with a few melon balls, a spoonful of whipped cream, and a sprinkle of mint.Note: A nutritional analysis is provided for each serving.
