Grilled Chicken with Honey-Chipotle BBQ Sauce

Ingredients
2 teaspoons olive oil
¼ cup minced shallots
½ cup low-sodium ketchup
2 tablespoons water
1 ½ tablespoons honey
2 teaspoons apple cider vinegar
½ teaspoon dry mustard
½ teaspoon chipotle chili powder
½ teaspoon kosher salt, divided
½ teaspoon garlic powder
½ teaspoon ground cumin
¼ teaspoon black pepper
4 pitted chicken legs-thigh quarters, peeled

You can also use 8 thighs or 8 shins, or 4 pieces each; cook for about 10 minutes on each side.
Preheat the grill to medium-high heat.Heat a small saucepan over medium-high heat. Add the butter; stir to coat. Add the shallots; simmer for 2 minutes or until tender. Add ketchup, the following 5 ingredients (with chili powder added) , and 1/4 teaspoon salt. Reduce the heat to low and cook for 5 minutes, stirring occasionally.Combine 1/4 teaspoon salt, garlic powder, cumin and black pepper; sprinkle over chicken. Place the chicken on a grill rack greased with cooking spray; cook for 15 minutes on each side or until tender. Drizzle the sauce liberally over the chicken; turn and grill for 1 minute. Pour again, flip and cook on the grill for 1 minute. Serve with the remaining sauce.
