Halibut Veracruz

Ingredients
1 ½ tablespoons vegetable oil
1 cup chopped yellow onion
3 garlic cloves, chopped
2 cups peeled and diced tomatoes
1 diced jalapeno
1 cup dry white wine
1 ½ tablespoons olive oil
4 halibut fillets (8 oz.)
¼ teaspoon salt
½ cup chopped Spanish olives
2 avocados, peeled and sliced
1 lime
2 tablespoons chopped parsley or coriander
To make
Baked halibut is served on top of the classic Mexican sauce for the main course-Veracruz halibut. Sprinkle the fillet with avocado slices, lime juice and parsley.
Preheat the oven to 350 degrees. Heat the vegetable oil in a frying pan over medium-low heat. Add the onion and garlic; cook for 3 minutes. Add tomatoes, jalapeno and wine. Reduce the sauce to 1/3 cup (12-15 minutes). Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add salt to the halibut fillet. Transfer the fish to a hot skillet. Cook until the innards are lightly browned (2-3 minutes). Turn the fish over. Bake for 10 minutes. Remove the sauce from the heat; add the olives. Divide the sauce into 4 plates; top with the avocado fillet and slices, the juice of 1 lime, and chopped parsley or cilantro.
