Spicy Pork and Sauerkraut Sandwiches

Ingredients

½ teaspoon salt, divided
½ teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon ground black pepper
1 pound pork tenderloin, peeled and sliced crosswise in 1/4-inch thick slices
1 tablespoon vegetable oil, divided
Cooking Spray
4 cups packaged kale and carrot salad (about 8 ounces)
1 tablespoon ready-made horseradish
1 tablespoon red wine vinegar
½ teaspoon ground red pepper flakes
1 ½ teaspoons worcestershire sauce
⅓ cup low-fat mayonnaise
1 tablespoon dijon mustard
4 (2 oz) Kaiser Rolls or Hamburger buns
16 1/8-inch cucumber slices

To make

From the mixture with cabbage salad, an easy and quick "sauerkraut" is obtained, which turns out to be brighter and less salty than according to the traditional recipe.
Combine 1/4 teaspoon salt, oregano, thyme, and black pepper; sprinkle the pork with the spice mixture. Heat 1 1/2 teaspoons of oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add the pork; cook for 2 minutes on each side or until tender. Remove pork from the pan; keep warm.Heat 1 1/2 teaspoons of oil in a skillet over medium-high heat. Add 1/4 teaspoon salt, coleslaw, and the next 4 ingredients (coleslaw with Worcestershire sauce); cook for 2 minutes, stirring frequently. Remove from heat.Combine the mayonnaise and mustard; spread the mixture evenly over the cut sides of the rolls. Spread the coleslaw mixture, pork slices, and cucumber evenly over the bottom halves of the rolls. Top with half rolls.
