Summer Fruit Salad with Lemon-and-Honey Syrup

Ingredients
Syrup:
1 cup of water
⅓ cup of honey
2 tablespoons fresh lemon juice
½ teaspoon vanilla extract
Salad:
3 cups chopped peeled melon
2 cups seedless grapes
1 ½ cups pitted cherries, halved (about 1/2 pound)
1 ½ cups chopped peaches, peeled (about 2 peaches)
6 fresh figs, cut into quarters
4 apricots, quartered and pitted (about 1/2 pound)
½ cup chopped fresh mint
To make
You can also use plums, nectarines, or berries in this fruit salad recipe. Pre-slice the fruit and store it in a zippered plastic bag in the refrigerator. An hour before serving, mix the fruit with the syrup.
To make the syrup, combine the first 4 ingredients in a small saucepan. Bring to a boil; reduce heat to medium and cook until reduced to 1/4 cup (about 15 minutes).To make the salad, put the melon and the following 5 ingredients (melon through apricots) in a large bowl. Drizzle the syrup over the fruit; stir gently to coat. Cover and refrigerate for 1 hour, stirring occasionally. Sprinkle with mint before serving.
