¼ cup almond flour
¼ cup panko
¼ teaspoon ground coriander
⅛ a teaspoon of ground cumin
4 salmon fillets (6 oz each) about 1 inch thick
2 teaspoons lemon juice
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Preheat the oven to 500 degrees.Combine the first 4 ingredients in a shallow bowl; set aside.Brush the fish on top and sides with the juice: season with salt and pepper. Working 1 fillet at a time, roll the top and sides in the almond mixture; place skin side down on a baking sheet greased with cooking spray. Sprinkle the remaining crumble mixture evenly over the fish; press lightly to make it stick. Bake at 500 ° C for 15 minutes or until the fish is easily delaminated when tested with a fork, or until the desired degree of roasting. Serve with lemon wedges.
