Ingredients
1 tablespoon vegetable oil
1 medium onion, chopped
2 carrots, chopped
2 celery ribs, chopped
2 garlic cloves, minced
2 32-ounce containers of low-sodium, low-fat chicken stock (we used Swanson)
2 cups chopped boiled chicken
¼ teaspoon dried thyme
½ cup raw alphabet pasta

1 Heat the oil in a roasting pan over medium-high heat until hot. Add the onion, carrot and celery. Saute the vegetables in the preheated oil for 5 minutes; add the garlic and simmer for 1 minute or until the vegetables are soft and the mixture smells good. Add broth, chicken and thyme. Bring to a boil; reduce heat and simmer, stirring occasionally, for 15 minutes. Add the pasta and cook for 8 minutes or just until the pasta is tender.
