Apple-Cranberry Walnut Crisp

Ingredients

Filling:
9 cups peeled, chopped holiday apples (about 3 pounds)
½ cup fresh cranberries
½ cup apple cider or juice
¼ cup maple syrup
1 ½ teaspoons cornstarch
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch of salt

1 cup plain oatmeal
1 cup whole wheat flour for baking
2 cups coarsely chopped walnuts
⅓ cup maple syrup
¼ cup softened unsalted butter
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
½ teaspoon salt

To make

The combination of oatmeal, wholemeal baking flour, and walnuts gives the topping a taste a little like a granola bar. This dish can be prepared in advance and reheated in the oven at 250 ° C during dinner. It is great to serve with low-fat vanilla ice cream.
Preheat the oven to 375 degrees. To make the filling, mix the apples and the following 7 ingredients (apples with a pinch of salt). Spoon the apple mixture into a 13-inch x 9-inch baking dish.To prepare the topping, combine the oat flakes and other ingredients. Sprinkle with apple mixture. Cover with foil; bake at 375 ° C for 40 minutes. Uncover; bake for another 20 minutes or until the filling is crisp and the juice is thick and bubbling.
