Apricot Lamb Chops

Ingredients
½ cup apricot jam
2 teaspoons dijon mustard
1 teaspoon bottled minced garlic
1 teaspoon low-sodium soy sauce
½ teaspoon Worcestershire sauce
¼ teaspoon salt
⅛ a teaspoon of ground cinnamon
⅛ a teaspoon of ground black pepper
8 lamb loin chops (4 oz.), trimmed

Lamb goes well with Moroccan notes of cinnamon and apricot. Pork chops can be replaced with lamb, and they will turn out no less delicious. Serve with couscous and stewed green beans.
Combine the first 5 ingredients in a small bowl; set aside. Combine salt, cinnamon and pepper and sprinkle the lamb on both sides. Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the lamb to the skillet; cook for 5 minutes on each side or until just cooked through. Remove the pan from the heat; add the apricot mixture, turning the lamb to coat. Arrange 2 chops on each of the 4 dinner plates; spread the remaining apricot mixture evenly over the chops.
