1 ½ cups (approximately 6 3/8 ounces) all-purpose flour
¾ cup granulated sugar
1 ½ tablespoons matcha green tea powder
1 teaspoon baking soda
½ teaspoon kosher salt
1 ripe avocado
1 large egg
1 teaspoon vanilla extract
2 large ripe bananas
¼ cup vegetable oil
2 teaspoons black sesame seeds

There is absolutely nothing wrong with banana bread. This is a classic breakfast dish, like a regular bagel or donut with icing. However, there are cases when the classics simply do not cause delight. After that, we take out the greens. Avocado powder and matcha green tea may not be part of your regular baked goods, but they not only give banana bread a delicious dark green hue, but they also give the loaf an earthy taste that softens the banana flavor.The avocado puree moisturizes the quick bread, making it even more tender, and also gives it a soft, vegetal touch that you just won't find in regular sweet banana bread. Matcha then enhances the avocado's complex flavor and gives it a rich color. Slice the bread while it's still warm (or put it in the toaster) and spread it with a thick layer of cream cheese or Greek yogurt.Banana bread with avocado and matcha
Preheat the oven to 350°F. Lightly coat a 9-inch x 5-inch bread pan with cooking spray.Whisk together the flour, sugar, matcha, baking soda, and salt in a large bowl until smooth. Set aside.Combine the avocado, egg, and vanilla in a food processor until smooth, about 30 seconds.Mash the bananas in a large bowl with a fork until smooth. Add the avocado and butter mixture; toss to combine. Add flour mixture; mix until smooth. Pour the batter into the prepared baking dish and sprinkle with sesame seeds. Bake in the preheated oven until a wooden stick inserted in the center comes out clean, 50 to 55 minutes.Let the bread cool completely in the pan on a wire rack for about 30 minutes.
