Ingredients

Any crumbly cookies or sweet cracker – 300 g
Butter – 100 g
Large eggs – 5 PCs
Sugar – 2 cups
Ricotta, Philadelphia or mascarpone cheese – 850 g
Fresh lemon juice – 2 tablespoons
Zest of half lemon
Sour cream – 2 tablespoons
Vanilla sugar – 1 tablespoon
Flour – 3.5 tablespoons
Salt – 1 pinch
Vanilla – 0.5 tsp

Those who love baking will surely appreciate the recipe below. Classic cheesecake will be a great treat for you and your guests. The very name of this dish suggests that cheese will be used for its preparation, in other words it is a "cheese pie". However, the cheese is also not the usual. This delicious dessert is quite easy to perform, and therefore it can be prepared independently. It should be noted at once that it includes cookies and delicate cream cheese. 

When you have prepared the ingredients you can start cooking pressing cheesecake. Use a meat grinder or blender to crush the cookies. Add melted butter and 2 tablespoons of sugar. Mix the added ingredients thoroughly until smooth. 

Put the dough in a special baking dish. Good capacity with a diameter of about 25 cm. Spread the mixture evenly, a little tamp and I can put it in the oven. It is desirable to preheat the oven initially at a temperature of 180 degrees. Baking time – 10 minutes. After preparing the cake, remove it and let cool. 

Next, proceed to prepare the filling for the classic cheesecake. Cheese beat with a mixer at low speeds with vanilla, salt, juice and lemon zest, 1.5 cups sugar. Gradually pour the flour into the mixture. At the end, add the eggs and bring everything to a uniform state. 

The walls of the baking dish grease with oil. Pour the filling into the baked crust. The form should not be filled in more than 3/4 of its volume. Send our cheesecake back in the oven for one hour. Under the form on the lowest shelf of the furnace put the container filled to half with water. When the outer part is slightly browned, you can remove the cake from the oven. Its middle may be a little jelly-like. The cake is ready. Now let it cool down for about 10-12 minutes. 

To prepare the glaze, beat the sour cream with the remaining sugar and add vanilla. This mixture was spread over the cheesecake and send it to the oven for another 7-8 minutes. After remove the dessert, let it cool and refrigerate for 3-4 hours. During this time, the cake is infused and soaked. Before serving cheesecake on the table cake can be decorated with chocolate chips, berries or syrup.
