Carrot Cake

Ingredients
2 cups sugar
1.5 cup vegetable oil
4 eggs
2.5 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons salt
2 teaspoons cinnamon
3 cups shredded raw carrots
1 cup chopped nuts (such as walnuts)

This spiced cake is so sweet and rich that no one will guess there are vegetables hiding within it. A perfect use for extra carrots from the garden!
Preheat oven to 350°f/175°c
- Mix sugar, oil, and eggs together until combined
- In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon
- Add half of the flour mixture into the egg mixture, then add the carrots, and the remaining flour, mixing everything after each addition
- Stir in nuts
- Pour cake batter into 2 circular cake pans or 1 large rectangular pan
- Bake for 25-30 minutes or until a knife inserted in the middle of the cake comes out clean. You may need to adjust the cooking time based on your oven
- Remove cakes from pans and let them cool before you top them with frosting (such as cream cheese frosting)
