Carrot Cake


2 cups sugar
1.5 cup vegetable oil
4 eggs
2.5 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons salt
2 teaspoons cinnamon
3 cups shredded raw carrots
1 cup chopped nuts (such as walnuts)

To make

This spiced cake is so sweet and rich that no one will guess there are vegetables hiding within it. A perfect use for extra carrots from the garden! 

Preheat oven to 350°f/175°c

  1. Mix sugar, oil, and eggs together until combined
  2. In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon
  3. Add half of the flour mixture into the egg mixture, then add the carrots, and the remaining flour, mixing everything after each addition
  4. Stir in nuts
  5. Pour cake batter into 2 circular cake pans or 1 large rectangular pan
  6. Bake for 25-30 minutes or until a knife inserted in the middle of the cake comes out clean. You may need to adjust the cooking time based on your oven
  7. Remove cakes from pans and let them cool before you top them with frosting (such as cream cheese frosting)
