Semolina cookies with dates
To make
Take 500 g of dried dates, wash them, separate the flesh from the seeds and finely chop. Add 1/4 tsp ground cinnamon and 1 tbsp orange zest, stir and set aside for a while.
For the syrup, 1/2 Cup of water, combine with 500 g of sugar, 0.5 tsp ground ginger and boil for 15 minutes, cool.
On a small fire, lightly heat 120 ml of olive oil, pour them 500 g of semolina and mix well. Add 250 ml of warm boiled water, 0.5 tsp soda and knead the dough.
Roll it into a layer 0.5 cm thick. put the stuffing from the dates on Top and roll into a tight roll. Cut into 1.5-2 cm thick slices.
In a saucepan, heat 3 cups of vegetable oil, lower the cookies there, fry for 2-3 minutes.
Blot with a paper towel to allow excess oil to soak in. Cool and dip the cookies in the syrup.
