Baked Potato-and-Bacon Soup

Ingredients

5 ¼ pounds baked potatoes
7 slices of bacon
4 ½ cups chopped onion
1 teaspoon salt
5 garlic cloves, minced
1 bay leaf
7 ½ cups 1% low-fat milk
¾ teaspoon ground black pepper
3 cups low-sodium, fat-free chicken stock

1 ¼ cups chopped green onion
1 ¼ cups (5 ounces) finely chopped spicy low-fat cheddar cheese

To make

Bake the potatoes and chop the cheese the day before making the baked potato soup with bacon. If the soup needs to boil a little on the stove, you may need to add more chicken broth.
Preheat the oven to 400 degrees.Prick the potatoes with a fork; bake at 400 ° C for 1 hour or until tender. Allow to cool slightly. Partially mash the potatoes, including the skin, with a potato masher; set aside.Bake the bacon in a roasting pan over medium-high heat until crisp. Remove the bacon from the pan; crumble. Add the onion to the bacon filling in the pan; simmer for 5 minutes. Add salt, garlic and bay leaf; simmer 2 minutes. Add the potatoes, milk, pepper, and stock; bring to a boil. Reduce the heat and simmer for 10 minutes. Add parsley if desired. Sprinkle individual portions with bacon, green onions, and cheese.
