Banana Snacking Cake

Ingredients

6 ¾ ounces all-purpose flour (approximately 1 1/2 cups)
⅓ cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon salt
1 cup plain low-fat yogurt
¾ cup mashed ripe banana (about 1 medium size)
¼ cup canola oil
1 teaspoon vanilla extract
1 large egg, lightly beaten
Cooking Spray
½ cup frozen low-fat whipped cream filling, defrosted

To make


Preheat the oven to 375 degrees.Spoon flour into dry measuring cups; smooth with a knife. Combine the flour and the following 5 ingredients (with added salt) in a large bowl; whisk to combine. Make a well in the center of the flour mixture.Combine the yogurt, banana, butter, vanilla, and egg in a small bowl; mix until smooth. Add the yogurt mixture to the flour mixture in a large bowl, stirring until it becomes moist.Pour the batter into a 9-inch square metal baking dish coated with cooking spray. Bake at 375 degrees for 20 minutes or until a wooden stick inserted in the center comes out clean. Cool the cake pan for 10 minutes on a wire rack; remove from the pan. Cool completely on a wire rack. Serve with whipped cream.
