Ingredients

2 tablespoons all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon onion powder
½ teaspoon salt
⅛ a teaspoon of ground red pepper
2 large egg whites, lightly beaten
1 ½ cups coarsely ground cornflakes
1 pound catfish fillet, cut into 1/2-inch thick strips
Cooking Spray
⅓ cup of hot sauce (such as crystal sauce)
1 teaspoon hot pepper sauce (such as tabasco)
½ teaspoon Worcestershire sauce
1 tablespoon butter
½ cup low-fat ranch dressing
4 celery stalks, cut into 1/4-inch x 3-inch sticks
4 carrots, cut into 1/4-inch x 3-inch strips

To make

The dish was inspired by buffalo chicken wings. We breaded the catfish strips in breadcrumbs and then drizzled them with hot sauce. If you don't like spicy dishes, don't add hot pepper sauce.
Preheat the oven to 400 degrees.Combine the first 6 ingredients in a shallow bowl, stirring with a whisk. Put the egg whites in a shallow dish. Place the cornflakes in a shallow bowl. Process 1 strip of fish at a time and roll in the flour mixture. Dip in egg whites; roll in cornflakes. Place on a baking sheet greased with cooking spray. Repeat with the remaining fish strips, flour mixture, egg whites, and cornflakes.Lightly brush the fish strips with cooking spray. Bake at 400 ° C for 10 minutes or until cooked through, turning once.Combine the hot sauce, pepper sauce, and Worcestershire in a small saucepan; bring to a boil. Reduce the heat and simmer for 1 minute. Remove from the heat; add the butter. Drizzle the hot sauce mixture over the fish. Serve with ranch dressing, celery and carrots.
