Caramelized Onion-Cranberry Compote

Ingredients
1 tablespoon butter
2 cups thinly sliced sweet onion
¼ cup balsamic vinegar
½ cup fresh or frozen cranberries (defrosted), coarsely chopped
1 tablespoon sugar
½ teaspoon salt
½ teaspoon grated orange zest

You can prepare it a day in advance and store it in an airtight container in the refrigerator. Allow to infuse at room temperature for 30 minutes before serving.
Melt the butter in a large skillet over medium-high heat; add the onion and simmer for 15-18 minutes or until golden and soft. Add the vinegar and other ingredients; cook, stirring occasionally, for 2-4 minutes or until the liquid is reduced to about 2 tablespoons.Caramelized onion-cranberry-cream cheese slices: Spread 16 whole-grain crackers on 1 1/2 teaspoons of 1/3-teaspoon low-fat cream cheese; sprinkle each with 1 tablespoon of caramelized onion-cranberry compote.
