Ingredients

2 tablespoons brown sugar
1 teaspoon ground cumin
¾ teaspoon salt
⅛ a teaspoon of ground red pepper
⅛ a teaspoon of ground black pepper
1 clove garlic, minced
1 (2 1/2 lb) boneless pork loin, trimmed
Cooking Spray
2 medium onions, sliced
⅓ cup balsamic vinegar
2 tablespoons butter
2 Granny Smith apples, sliced
2 roman apples, sliced

To make

Bake pork loin in a mixture of brown sugar, butter and apples. Prepare a low-fat pork dish that is perfect for a treat. Please note that the icing sugar may burn if the roast is not turned often enough.
Preheat the oven to 425 degrees.Combine the first 5 ingredients in a small bowl.Rub the surface of the trimmed pork loin with garlic. Preheat a large skillet greased with cooking spray over medium-high heat. Add the pork and onion; cook for 10 minutes or until browned on all sides, turning occasionally.Place the pork in a 13-inch x 9-inch baking dish, greased with cooking spray. Sprinkle the roast with the sugar mixture. Arrange the onions around the pork and drizzle with vinegar. Bake at 425 ° C for 20 minutes.Melt the butter in a large skillet over medium-high heat; add the apples and simmer for 5 minutes or until golden brown.Remove the pork from the oven and arrange the apples around the pork; reduce the heat to 350 ° and cook for another 20 minutes or until the pork is tender.Pour the filling into a medium saucepan and cook over medium-high heat until reduced to 1/3 cup (about 14 minutes). Sprinkle the pork, apples and onions.
