Cedar Plank-Grilled Salmon with Mango Kiwi Salsa

Ingredients
1 large cedar plank
1 cup finely chopped peeled ripe mango
½ cup peeled kiwis, diced
2 tablespoons chopped fresh cilantro
1 teaspoon extra virgin olive oil
1 teaspoon fresh lime juice
1 serrano chili, finely chopped
½ teaspoon kosher salt, divided
½ teaspoon freshly ground black pepper, divided
4 (6 oz) eco-friendly skinless salmon fillets (such as wild Alaskan)
To make
Smoky grilled salmon on a cedar plank goes well with the spicy sweetness of tropical mango and kiwi salsa. Prepare the mango and kiwi salsa before the salmon, so that the flavors have time to blend.
Soak the plank in water for 25 minutes.Preheat the grill to medium-high heat.Combine the mango and the following 5 ingredients (with chili). Add 1/4 teaspoon salt and 1/4 teaspoon pepper; set aside.Sprinkle the salmon with the remaining 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper. Place the board on the grill rack; cook for 3 minutes or until lightly browned. Turn the board upside down; place the fish on the browned side. Cover; cook on the grill for 8 minutes or until just cooked through. Place each fillet on a plate; top with 1/3 cup mango salsa.
