Chicken Piccata with Orzo

Ingredients
1 cup raw orzo
2 teaspoons grated lemon zest
4 chicken patties (4 oz each)
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 tablespoon olive oil
¼ cup white wine
½ cup low-sodium, fat-free chicken stock
1 tablespoon fresh lemon juice
1 tablespoon chilled butter, cut into small pieces
2 tablespoons chopped fresh parsley
1 tablespoon capers

This weeknight quick meal is low in calories and fat and uses chicken breast patties for quick cooking. It takes less than 20 minutes to prepare the entire dish, and it is sure to become a favorite in the family. Serve the chicken with the sauce on top of orzo or wild rice with a side salad.
Prepare the orzo according to the instructions on the package. Drain the water. Add the peel.While the orzo is cooking, preheat a large skillet over medium-high heat. Sprinkle the chicken with salt and pepper. Pour the oil into the pan; stir to coat. Add the chicken; cook for 3 minutes on each side or until tender. Remove from the mold; keep warm. Add the wine; cook for 1 minute or until the liquid is almost evaporated, scraping off the pan to release browned pieces. Add broth and lemon juice; bring to a boil. Cook for 2 minutes or until reduced to 1/2 cup. Remove from the heat; add the butter, stirring, until the butter melts. Add the parsley and capers. Serve with orzo.
