Chicken Sate with Peanut Sauce

Ingredients
Saturate:
1 pound skinless and boneless chicken breasts, cut into 8 strips
1 tablespoon light brown sugar
2 ½ tablespoons low-sodium soy sauce
2 teaspoons bottled ground fresh ginger (such as Spice World)
1 teaspoon grated lime zest
¼ teaspoon ground red pepper flakes
2 garlic cloves, minced
Sauce:
1 tablespoon light brown sugar
1 ½ tablespoons low-sodium soy sauce
1 tablespoon fresh lime juice
2 tablespoons low-fat natural peanut butter (such as Smucker's)
¼ teaspoon ground red pepper flakes
1 clove garlic, minced

Try this flavorful, slightly spicy Asian saté for a light weeknight chicken dinner.
Prepare the grill.To make the sate, combine the chicken and the following 6 ingredients (including 2 garlic cloves) in a medium bowl. Let stand for 10 minutes.To make the sauce, combine 1 tablespoon brown sugar and the following 5 ingredients (through 1 garlic clove) in a medium bowl, stirring until the sugar is dissolved.Thread chicken strips on each of 8 (8-inch) skewers. Place the chicken on a grill rack greased with cooking spray; cook for 5 minutes on each side or until the chicken is cooked through. Serve the chicken with the sauce.
