Chili with Chipotle and Chocolate

Ingredients
Cooking Spray
2 cups diced onion (about 1 large)
1 cup chopped red bell pepper
1 teaspoon minced garlic
1 ¼ pounds ground turkey breast
3 tablespoons brown sugar
2 tablespoons ancho chili powder
1 tablespoon unsweetened cocoa powder
1 teaspoon ground cumin
½ teaspoon freshly ground black pepper
¼ teaspoon salt
2 cans of pinto beans (15 oz each), rinsed and dried
2 cans tomatoes, diced, skinless (14.5 oz each)
1 can low-sodium, fat-free chicken stock (14 ounces)
2 chipotle chilies, canned in adobo sauce, minced
2 ounces unsweetened chocolate, chopped
½ cup light sour cream
Chopped green onion (optional)
To make
Ever tried chili with chocolate? Smoky chipotle chili and earthy unsweetened chocolate add unexpected depth and richness to this hearty chili.
Preheat a roasting pan over medium-high heat. Brush the mold with cooking spray. Add the onion, bell pepper, garlic, and turkey to the pan; simmer for 8 minutes or until the turkey is browned and the vegetables are tender. Add the sugar and the following 9 ingredients (via chipotle) to the pan, stirring to blend; bring to a boil. Reduce heat; simmer 15 minutes or until slightly thickened, stirring occasionally. Add the chocolate, stirring to make it melt. Pour 1 1/4 cups chili powder into each of 8 bowls; pour 1 tablespoon sour cream over each serving. Garnish with green onions.
