How to Cook Spaghetti Squash

Spaghetti squash is a great, low-calorie substitute for noodles in any dish. It has a mild taste and similar texture to noodles when cooked. This recipe talks about how to roast a spaghetti squash for use in other recipes.
Heat oven to 400°F/200°C
Using a sharp knife, carefully slice around the squash the long way to cut it in half. If you are having difficulty, you can pierce the squash with a fork and heat it in a microwave for 1 minute so that it is more tender.
Once the squash is open, remove the seeds with a spoon as you would a pumpkin. These seeds are safe to eat and can be roasted like pumpkin seeds!
Next, brush both halves of the squash with oil on the inside, then sprinkle with salt and pepper. Put the squash halves cut-side down onto a flat baking pan, and cook for 40 minutes or until tender.
Remove the squash from the over, and use a fork to separate the flesh from the skin. It will naturally turn into noodle-shapes!
