Cold Sesame Noodles with Chicken and Cucumbers

Ingredients
8 oz raw dried udon noodles
¼ cup rice vinegar
2 tablespoons dark sesame oil
2 tablespoons low-sodium soy sauce
1 tablespoon honey
2 teaspoons sambal olek or chili paste with garlic
½ teaspoon bottled ground fresh ginger
2 cups shredded skinless and boneless chicken breast for grilling
2 medium cucumbers, halved lengthwise and sliced
6 tablespoons chopped green onions
3 tablespoons ground peanuts, toasted dry
To make
Make a simple pasta dish with chicken, cucumbers and peanuts.
Cook the noodles according to the directions on the package, without adding salt or fat. Drain and rinse under cold water; strain.Combine the rice vinegar and the following 5 ingredients (with ginger added) in a large bowl and whisk to combine. Place noodles, chicken, and cucumbers in a bowl; toss gently to coat. Top with green onions and peanuts.Wine Note: Floral, savory white wines from Argentina, such as the 2007 Alamos Torrontes ($10), pair incredibly well with Asian cuisine. -Gary Vaynerchuk
