Dutch Baby Apple Pancake

Ingredients

½ cup halved
3 large eggs
½ teaspoon vanilla extract
6 tablespoons melted unsalted butter
½ cup all-purpose flour
¼ teaspoon salt
½ teaspoon cinnamon
3 tablespoons light brown sugar
2 tablespoons lemon juice
2 Granny Smith apples, peeled, cored and sliced
¼ cup chopped walnuts, optional
Powdered sugar optional

To make


Preheat the oven to 375°F. Whisk the eggs, vanilla and 2 tablespoons of butter in a blender until smooth. Combine flour, salt, and 1/4 teaspoon cinnamon.In a 10-inch nonstick skillet, combine the remaining butter and cinnamon with the brown sugar and lemon juice. Bring to a boil over medium-high heat, stirring occasionally. Add the apples, reduce the heat to low, and simmer, stirring frequently, until the apples are soft and the liquid thickens, about 7 minutes.Pour the batter from the blender over the apple mixture; sprinkle with nuts if desired. Bake until the dough is lightly browned, 25 to 30 minutes. If desired, sprinkle with powdered sugar.
