Easy Chicken Adobo

1 tablespoon vegetable oil
6 boneless and skinless chicken thighs
3 garlic cloves, minced
⅔ cup apple cider vinegar
⅓ cup soy sauce
1 teaspoon whole black peppercorns

Inspired by the Philippines ' national dish, this chicken adobo uses a simple blend of garlic, vinegar, and soy sauce to add a zesty flavor to the chicken. Traditional adobo sauces are usually seasoned with coconut milk, and the dish is often made with pork. But for everyday cooking, we like this easier and simpler chicken cooking recipe. Serve with rice. This is the perfect dinner to diversify your regular diet.
Heat the oil in a medium skillet over medium-high heat. Add the chicken and cook until it is lightly browned, about 5 minutes, then flip and cook for another 5 minutes. Transfer the chicken to a plate and set aside.Drain all but 1 tablespoon of the drippings from the pan and return the pan to a low heat. Add the garlic and saute until soft, about 1 minute. Add the remaining ingredients and mix until smooth. Return the chicken to the pan and cook under the lid for 20 minutes.Remove the lid, turn up the heat to medium-low and cook for another 15-20 minutes, drizzling the sauce over the chicken from time to time, until the sauce is slightly thickened and the chicken is tender and nicely coated with the sauce. Remove the bay leaf before use.Note: A nutritional analysis is provided for each serving.
