Espresso Crepes with Ice Cream and Dark Chocolate Sauce

Ingredients
⅓ cup in half
2 tablespoons honey
3 ounces semisweet chocolate, chopped
8 espresso Pancakes
2 cups low-fat coffee ice cream

Since both pancakes and chocolate sauce can be prepared in advance, this is the simplest dessert. If you prepare the sauce in advance, reheat it just before serving.
Combine the cream in half with the honey in a small saucepan over medium heat; cook for 3 minutes or until tiny bubbles form around the edges of the pan, stirring frequently (do not boil). Remove from heat. Add the chocolate; stir until smooth.Fold each pancake in half; fold in half again. Place 1 pancake on each of 8 plates. Top each serving with 1/4 cup of coffee ice cream; drizzle with 4 teaspoons of sauce.
