Ingredients
3 tablespoons all-purpose flour
1 pack fajita seasoning (1.4 oz), divided
4 skinless chicken breast halves, diced
3 tablespoons vegetable oil
1 medium onion, chopped
1 teaspoon minced garlic
1 can wholemeal corn (15 1/4-ounce cans) with red and green pepper, drained
1 can black beans (15 oz), washed and dried
1 can mexican stewed tomatoes (14 1/2 ounces)
1 can chopped green chili (4.5 oz)
3 cups water
1 cup raw brown instant rice
1 can (2 1/4-ounce cans) sliced ripe olives (optional)
1 can condensed nacho cheese soup (10 3/4 ounces)
3 tablespoons chopped fresh cilantro
1 tablespoon lime juice
Garnish with chopped fresh cilantro

The list of ingredients may be long, but it turns out fast and delicious.
Combine the flour and 2 tablespoons of fajita seasoning in a zippered plastic bag; add the chicken. Close and shake to coat.Saute the chicken in the preheated oil in a large roasting pan over high heat, stirring frequently, for 4 minutes or until lightly browned. Reduce heat to medium-high; add onion and garlic; simmer 5 minutes. Add the remaining fajita seasoning, corn, the next 5 ingredients and, if desired, olives. Bring the mixture to a boil; reduce the heat to medium-low, cover and simmer for 5 minutes. Remove the lid and add the cheese nacho soup, chopped coriander and lime juice. Garnish if desired and serve with breadsticks.
