Ingredients

3 tablespoons canola oil
2 pounds sweet onions (about 2 large), thinly sliced (about 8 cups)
1 teaspoon kosher salt
1 teaspoon granulated sugar
½ teaspoon ground black pepper
2 tablespoons dry sherry
1 tablespoon chopped fresh flat-leaved parsley
1 tablespoon chopped fresh thyme leaves
8 ounces grated gruyere cheese (about 2 cups), divided
2 pcs (1.9 oz) frozen mini phyllo molds (15 cups each)
1 tablespoon chopped fresh green onion

Easy to assemble and perfectly portable, these French onion soup appetizers will make a great addition to any festive table. They're similar to your favorites found in Trader Joe's refrigerator, but tastier.
Heat the oil in a large skillet over medium-high heat. Add the onion, salt, sugar and pepper; cook, stirring frequently, for 5 minutes. Reduce the heat to medium-low; cook, stirring frequently, until the onions are golden brown and very tender, about 25 minutes. Add the sherry, parsley and thyme; cook, stirring frequently, until fragrant, about 1 minute. Remove from heat. Add 1 3/4 cups cheese; set aside.Preheat the oven to 350°F. Place the phyllo shells on a baking sheet and top with about 1 tablespoon of the onion mixture; top each cup with the remaining cheese. Bake in the preheated oven until the cheese is melted, about 10 minutes. Place on a serving platter and sprinkle with spring onions. Serve hot.
