Fried Parsnips

Ingredients
12 medium parsnips (about 3/4 pound), peeled
¾ teaspoon salt
1 teaspoon pepper
¾ cup thin, dry breadcrumbs

To make
Cook whole parsnips in boiling water, covered, for 20 minutes or until tender; drain. Cut the parsnips into 3 x 1/2-inch strips.Combine the salt, pepper, and breadcrumbs in a large zippered plastic bag; add the parsnips a few at a time, shaking to coat.Pour the oil 3 inches deep into a roasting pan and heat until the thermometer reads 375 degrees. Saute the parsnips, several pieces at a time, for 1 minute. Drain on paper towels; serve immediately.
