Greek Turkey Burgers

Ingredients
1 large egg white
1 cup chopped red onion
¾ cup chopped fresh mint
½ cup dry breadcrumbs

1 teaspoon dried dill
1 pound ground turkey
Cooking Spray
4 divided hamburger buns (1 1/2 oz each)
1 bottled, 7-ounce red bell pepper, peeled and cut into 1-inch thick strips
To make
Chunks of feta cheese, red onion and fresh mint add sparkle to these flavorful burgers.
Put the egg white in a large bowl; beat lightly with a whisk. Add the onion and the next 6 ingredients (via the turkey); mix well to combine. Divide the turkey mixture into 4 equal portions, forming each into a 1/2-inch thick patty.Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Place the patties in the pan; cook for 8 minutes on each side or until tender.Place the patties on the bottom halves of the hamburger buns. Spread the pepper evenly over the patties; top with the muffin halves.Note: To freeze additional portions, wrap each raw patty individually first in plastic wrap and then in strong aluminum foil. Freeze for up to 2 months. Defrost the cutlets completely in the refrigerator before serving, then cook and serve as directed.
