Green Beans with Lemon and Garlic

Ingredients
2 cups water
1 ½ pounds green beans, chopped
1 ½ tablespoons olive oil
1 ½ tablespoons butter
1 clove garlic, minced
2 tablespoons fresh lemon juice
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
To make
Beans can be prepared in advance until crisp, and then put in the refrigerator. Just before serving this side dish, quickly fry the beans with garlic and lemon juice.
In a large skillet, bring the water to a boil. Add the beans; cover, reduce the heat, and simmer for 8 minutes or until tender. Drain the beans; drain to dry.Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and simmer for 30 seconds. Add the beans, juice, salt and pepper; cook for 2 minutes or until completely warmed through. Sprinkle with parsley.
