Grilled Chicken with Peanut Sauce

Ingredients

1 clove garlic, minced
¼ cup peanut butter (any kind)
2 tablespoons sugar
¼ teaspoon red chili flakes
2 tablespoons low-sodium soy sauce
4 boneless, skinless chicken breast halves (about 2 pounds)
1 tablespoon vegetable oil

To make

This is such a simple, flavorful chicken recipe. This quick and easy peanut sauce gives grilled chicken a special flavor with minimal hassle. Serve it with stewed vegetables and rice for an inspiring weeknight dinner that the whole family will enjoy.
Preheat the grill over high heat (450 ° to 550 °). In a small saucepan over medium-high heat, saute the garlic and peanut butter together until boiling, about 4 minutes. Whisk together the sugar, chili flakes, soy sauce, and 2/3 cup water. Reduce the heat and simmer, stirring occasionally, until thickened, about 10 minutes.Meanwhile, rub the chicken with oil and grill until golden brown and almost tender, turning once, for a total of about 6 minutes. Brush with about 1 tbsp. Pour each piece of chicken with the peanut sauce and cook until the sauce starts to caramelize, about 2 minutes. Serve with stewed vegetables and the remaining sauce on the side.Note: A nutritional analysis is provided for each serving.
