Grilled Pastrami-Style Salmon

Ingredients
1 tablespoon dark brown sugar
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon ground ginger
1 teaspoon ground coriander
1 teaspoon coarsely ground black pepper
¼ to 1/2 teaspoon ground allspice
1 (1 1/2 lb) salmon fillet, sliced in the center
½ teaspoon olive oil

Classic seasonings that pair with beef pastromes go great with this grilled salmon. Allspice is quite a strong spice, so if you are sensitive to its "burning", use a smaller amount. Purchase a salmon fillet that is cut in the center so that it is cooked more evenly than a fillet with a thinner tail.
Cook on the grill.Mix the first 7 ingredients together. Place the salmon fillets, skin side down, on a cutting board or work surface; brush evenly with olive oil. Sprinkle the salmon evenly with the spice mixture; gently rub the mixture into the fish. Cover lightly with plastic wrap and chill for 15 minutes.Place the fish skin-side down on a grate greased with cooking spray; cook for 10 minutes or until the fish flakes easily when pricked with a fork.
