Grilled Pineapple and Avocado Salad

Ingredients
2 small pineapples, peeled, cored and sliced
1 tablespoon sugar
¼ teaspoon ground red pepper flakes
Cooking Spray
8 cups torn boston lettuce
1 ¾ cups chopped cucumbers, unseeded
1 cup chopped red onion
¼ cup chopped fresh cilantro
3 tablespoons fresh lemon juice
1 ½ teaspoons salt
1 teaspoon extra virgin olive oil
¼ teaspoon freshly ground black pepper
1 diced peeled avocado
To make
Cook on the grill.Dry the pineapple with paper towels. Combine the sugar and red pepper in a small bowl; sprinkle the pineapple evenly with the sugar mixture. Place the pineapple on a grill rack greased with cooking spray; cook for 4 minutes on each side or until golden brown. Cool completely; slice.Place the pineapple in a large bowl. Add the lettuce leaves and other ingredients; mix well. Serve immediately.
