Grilled Potato Wedges with Fresh Herbs and Butter

Ingredients

2 tablespoons extra virgin olive oil
½ teaspoon kosher salt
½ teaspoon ground black pepper
2 large reddish-brown potatoes, cut into 8 slices each
2 tablespoons melted unsalted butter
1 teaspoon dijon mustard
1/4 cup chopped fresh herbs, such as rosemary, thyme, green onion, dill, and Italian parsley

To make

One of the quick and easy ways to make a side dish for your favorite steak or fish fillet is to fry several potato slices with a ruddy crust until golden brown and soft. It only takes about ten minutes, and they'll need quite a bit of butter and some fresh herbs to make them memorable.
Prepare the grill for direct cooking over medium heat (350 ° to 450 ° F).In a medium bowl, combine the oil, salt, and pepper. Place the potato wedges in a bowl and stir to coat evenly.Clean the cooking grate. Saute the potatoes over medium heat, with the lid closed as much as possible, until they are golden brown and fairly soft, 8 to 10 minutes, turning occasionally. Transfer the potatoes back to a medium bowl.In a small bowl, combine the butter and mustard. Pour over the potatoes. Add the herbs and stir to coat the potatoes evenly. Serve warm.
