Instant Black Bean Soup

Ingredients
2 cans unsalted black beans (15 oz each), unpeeled
½ cup bottled salsa
1 tablespoon chili powder
1 can low-sodium, fat-free chicken stock (16 oz.)
½ cup (2 oz) grated, spicy, low-fat cheddar cheese
5 tablespoons low-fat sour cream
5 tablespoons chopped green onions
2 ½ tablespoons chopped fresh cilantro
To make
Cooking time: 3 min. Serve with toasted tortilla slices.
Put the beans and liquid in a medium saucepan; mash the beans partially with a potato masher. Place on a high heat; add the salsa, chili powder, and stock. Bring to a boil. Pour the soup on plates; top with the cheese, sour cream, onion, and cilantro.
