1 (3 pounds) pumpkin nuts, peeled, seeded, and cut into 3/4-inch cubes (about 8 cups)
¼ cup water
½ teaspoon sea salt
½ teaspoon black pepper
½ teaspoon fresh thyme leaves

Zucchini with instant nuts in pots is an easy recipe for an autumn side dish that everyone needs in their arsenal. This simple recipe is similar to your usual baked zucchini with nuts, it has browned edges and a tender inner part that melts in your mouth, but is cooked in your kitchen appliance. Cook it yourself by adding your favorite spices and herbs to the diced butternut squash.
Turn on the "Stew" mode in the instant pot. Add the olive oil and heat until golden brown, about 1 minute. Add the pumpkin cubes and cook, in portions if necessary, stirring occasionally, until golden brown, about 5 minutes. Add 1/4 cup water and cover the instant pot with a lid; turn on the manual setting with " high pressure”, making sure that the steam valve is closed. Cook for 5 minutes (it will take about 8 minutes for it to heat up).Carefully open the steaming valve and allow the steam to escape completely, about 2 minutes. Turn off the cooking mode. Transfer the pumpkin to a serving platter. Sprinkle with salt, pepper and thyme. Serve immediately.
