Ingredients

½ cup granulated sugar
7 tablespoons softened butter
2 teaspoons grated lemon zest
⅓ cup of honey
½ teaspoon lemon extract
1 large egg
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup plain low-fat yogurt
Cooking Spray
1 cup powdered sugar
2 tablespoons fresh lemon juice
2 teaspoons grated lemon zest

To make


Preheat the oven to 350 degrees.Beat the first 3 ingredients with a mixer on medium speed until light and fluffy. Add the honey, extract, and egg; beat until smooth. Lightly pour the flour into dry measuring cups; smooth with a knife. Combine flour, baking powder and salt, stirring well with a whisk. Add the flour mixture to the sugar mixture alternately with the yogurt, starting and ending with the flour mixture. Place tablespoons on a baking sheet covered with cooking spray, 2 inches apart. Bake at 350 ° C for 12 minutes or until lightly browned.Combine powdered sugar and juice in a small bowl; whisk to combine. Spread the powdered sugar mixture evenly over the hot cookies. Sprinkle evenly with 2 teaspoons of the zest. Remove the cookies from the pan; cool on a wire rack.
