Light and Crispy Pan-Fried Catfish

4 (6-ounce catfish fillets
⅓ cup yellow corn flour

Evenly sprinkle 4 (6 oz) catfish fillets with salt and pepper to taste (or use a mixture of hot seasonings, such as creole or Caribbean jerky). Combine 1/3 cup yellow cornmeal and 1 tablespoon paprika in a shallow bowl. Roll the fillets in the cornmeal mixture; lightly brush with vegetable cooking spray. Cook in a hot nonstick skillet over medium-high heat for 3-4 minutes on each side, or until the fish begins to peel and turn opaque.
