Maple-Bacon Waffles

Ingredients
6 slices of bacon (about 6 ounces)
6 tablespoons maple syrup
2 cups all-purpose flour
1 teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
1 ⅓ cup buttermilk
4 tablespoons canola oil
2 large eggs
To make
Preheat the oven to 375ºF; line a baking sheet with parchment paper. Place the bacon on a baking sheet and brush both sides with 2 tablespoons of maple syrup. Bake, turning once, until crisp and lightly browned, 20 to 25 minutes. Remove the fat; reduce the oven temperature to 200ºF. Coarsely chop the bacon.In a large bowl, combine the flour, baking powder, baking soda, and salt. In a bowl, whisk the buttermilk with 2 tablespoons of canola oil, eggs, and remaining maple syrup. Mix buttermilk with flour. Roll in the bacon.Preheat a 7-inch waffle iron. Brush with a little oil and add 1/2 cup of batter. Cook until they are lightly browned and crisp, 6 minutes. Place the waffles on a plate and place in the oven; cook the remaining waffles. Serve with maple syrup if desired.
