Mediterranean Chicken Salad Pitas

Ingredients

1 cup plain Greek yogurt made from whole milk (such as Fage Total Classic)
2 tablespoons lemon juice
½ teaspoon ground cumin
¼ teaspoon ground red pepper flakes
3 cups chopped boiled chicken
1 cup chopped red bell pepper (about 1 large)
½ cup chopped pitted green olives (about 20 small ones)
½ cup diced red onion
¼ cup chopped fresh cilantro
1 can chickpeas (15 oz.) salt-free (garbanzo beans), washed and dried
6 (6 inches) whole-grain pitas, cut in half
12 lettuce leaves
6 1/8-inch-thick tomato slices, cut in half

To make

Prepare a Mediterranean chicken salad with Greek yogurt, green olives and chickpeas and serve in pita bread halves. Greek yogurt has a thick, rich consistency, similar to sour cream. To garnish, add pieces of melon and melon in honey sauce.
Combine the first 4 ingredients in a small bowl; set aside. Combine the chicken and the following 5 ingredients (via chickpeas) in a large bowl. Add the yogurt mixture to the chicken mixture; stir gently to coat. Place 1 lettuce leaf and 1 tomato slice on each half of the pita bread; add 1/2 cup chicken mixture to each half of the pita bread.
