Melon Salsa

Ingredients
2 cups diced melon with orange pulp, such as charente (1/4 to 1/2 inch). cubes)
1 cup diced cucumbers (1/4 to 1/2 inch cubes)
½ cup finely chopped red onion
1 serrano chili, legless, halved and sliced
½ cup coarsely chopped cilantro
3 tablespoons lime juice
1 tablespoon vegetable oil
1 teaspoon kosher salt
To make
The flesh of the Charente is orange, but you can use any melon with orange or green flesh for this salsa, just not watermelon, because its flesh is too fragile and watery. This salsa goes great with grilled chicken or pork.
Combine all the ingredients in a medium bowl.Leave for 1 day, cover and cool.Note: The nutritional analysis is given for a 1/2-cup serving.
