Mini Crab Melts

Ingredients
16 slices sourdough bread (3/4 oz.)
¾ cup mayonnaise
¾ teaspoon lemon zest
3 ½ tablespoons chopped fresh dill, divided
½ teaspoon salt
12 ounces crab meat, peeled and battered
2 tablespoons finely chopped red onion
32 1/4-inch thick rum tomato slices
4 ounces grated gruyere cheese (about 1 cup)
¼ teaspoon freshly ground black pepper
To make
Preheat the broiler. Place the bread slices in a single layer on a baking sheet and bake for 1-2 minutes on each side or until lightly golden and toasted.Whisk together the mayonnaise, lemon zest, 3 tablespoons dill and 1/4 teaspoon salt in a small mixing bowl. Combine crabs, onion, and 1/4 teaspoon salt in a medium bowl. Add 2 tablespoons of the mayonnaise mixture to the bowl; toss to combine.Spread the remaining mayonnaise mixture evenly over the toast. Spread the crab mixture evenly over the toast; top evenly with the tomato slices and cheese. Bake for 3 minutes or until the cheese is melted. Sprinkle with black pepper and the remaining 1/2 tablespoon of dill. Serve immediately.
