Ingredients
¼ cup chopped fresh cilantro
¼ cup fresh orange juice
¼ cup extra-virgin olive oil
½ teaspoon ground red pepper flakes
6 garlic cloves, minced
¾ teaspoon kosher salt, divided
1 pound skinless and boneless chicken breast halves
Cooking Spray
1 medium-sized red onion, peeled and cut into 1/2-inch thick rings
1 ripe avocado, peeled and sliced
1 lime, sliced
Chopped fresh coriander (optional)

Grilled red onions take on a pleasant blush, but after steaming they take on depth and sweetness. Pour any juice from the onion mixture over the grilled chicken. Fresh cilantro and savory lime add a refreshing touch to this light summer dish, perfect for the whole family. For a delicate taste, use less red pepper flakes or eliminate them altogether.
Combine 1/4 cup chopped cilantro and the following 4 ingredients (via garlic) in a large bowl. Leave 1/4 cup marinade in a medium bowl. Add 1/4 teaspoon salt and chicken to the remaining marinade, turning to coat. Let stand at room temperature for 20 minutes, turning occasionally.Preheat a grill pan over high heat. Brush the mold with cooking spray. Add the onion slices to the pan; cook for 10 minutes, turning occasionally. Add 1/4 teaspoon salt and onion to the remaining 1/4 cup marinade; cover tightly with plastic wrap. Let stand for 10 minutes.Place the grill pan on a high heat. Brush the mold with cooking spray. Remove chicken from marinade; drain marinade. Sprinkle the chicken evenly with the remaining 1/4 teaspoon salt. Transfer the chicken to the skillet; saute for 5 minutes on each side or until tender. Serve the chicken with the onion mixture, avocado slices, and lime wedges. Garnish with chopped coriander if desired.
