Mozzarella, Ham, and Basil Panini

Ingredients
1 16-ounce ciabatta loaf, cut horizontally in half
4 teaspoons dijon mustard
4 teaspoons balsamic vinegar
1/8 cup (8 oz) thinly sliced fresh mozzarella cheese
12 basil leaves
8 ounces of sliced gourmet ham with 33% less sodium (for example, Healthy Choice)
2 sweet hot cherry peppers, sliced
1 large tomato, thinly sliced

Serve these simple pressed sandwiches with pickled cucumber and vegetable chips.
Brush the bottom half of the bread on the cut side with mustard; brush the top half of the cut side with vinegar. Sprinkle the bottom half with mozzarella, basil, ham, pepper and tomatoes. Top with the remaining half of the bread.Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Transfer the sandwich to the skillet; top with another heavy skillet. Cook for 3 minutes on each side or until golden brown. Cut the sandwich into 6 slices.
