Ingredients
¾ cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted and cooled
light brown sugar in a pack of ¾ cup
1 large egg
½ teaspoon vanilla extract
1 ½ cups oat flakes (not instant)
1 cup coarsely chopped spiced lozenges

Preheat the oven to 350 ° F. Line two large baking trays with parchment. Combine flour, baking soda, and salt in a large bowl.In a large bowl, using an electric mixer on medium speed, beat the butter and brown sugar until smooth. Whisk with egg and vanilla. Pour in the flour mixture until smooth. Add the oatmeal and lollipops.Arrange the dough in heaped tablespoons on the prepared baking sheets, leaving 2 inches between each cookie sheet. Bake until golden around the edges, but still soft on top, about 15 minutes. Let stand on the baking sheets for about 5 minutes, then transfer to a wire rack and let cool completely.
