Ingredients
2 cups fresh lima beans
4 sprigs fresh thyme
½ small onion
1 clove garlic
1 ½ cups diced sweet onion
2 tablespoons olive oil
4 cups fresh corn kernels (about 6 cobs)
1 teaspoon honey
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
3 tablespoons chopped fresh green onions
To make
You can make this recipe with lemon or butter beans.
Put the Lima beans, thyme sprigs, half an onion, and garlic in a medium saucepan and cover with water. Bring the mixture to a boil over medium-high heat; reduce the heat to medium and simmer, stirring occasionally, for 20 minutes or until the beans are tender. Drain the beans, reserving 1/2 cup of the cooking liquid. Discard the thyme sprigs, onion, and garlic.Saute the diced onion in the preheated oil in a large skillet over medium-high heat for 5 minutes. Add the corn and honey; cook, stirring frequently, for 6 minutes or until the corn is tender. Add the beans and 1/2 cup of the remaining cooking liquid; cook, stirring occasionally, for 5 minutes. Stir in the butter and add salt and pepper to taste. Sprinkle with green onions.
