Orange-Olive Oil Cake with Vanilla Glaze

Cake:
1 ½ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 cup sugar
2 tablespoons finely grated orange zest (from about 3 large oranges)
3 large eggs
¼ cup fresh orange juice
¾ cup soft olive oil

1 ¼ cup powdered sugar
3 tablespoons whole milk
1 teaspoon vanilla extract

Prepare the pie: Preheat the oven to 350 ° F. Brush a 9-inch-diameter round pie dish (at least 2 inches deep) with cooking spray and olive oil. Pour the batter into the prepared pan and bake until a toothpick inserted in the middle comes out clean, 35 to 40 minutes. Let cool in the pan on a wire rack for 15 minutes. Run a small knife around the edge of the pie, then turn it over on the grill until it cools completely.Prepare the frosting: Whisk together the powdered sugar, milk, and vanilla in a small bowl until smooth. Place the pie and baking dish on a baking sheet lined with foil. Spread the icing on the cooled cake so that it runs down the edges. Let the glaze sit for at least 20 minutes before serving.
